Funky Fungi Old Fashioned

So today we learned some important lessons, the first and most important being to make sure you grabbed your simple syrup when making your Old Fashioned, and not your lime juice. The second of which being that mushrooms make a delicious mocktail.

I was intrigued by Solbru Alcohol-Free Elixers, which are mushroom-based alcohol alternatives. I got my bottle of Restore today, which is Reishi-based, and has a flavor profile that is rich, smokey, and has hints of orange and cardamom with a slight pepper. I’ll write a full review on Solbru Restore, but first, let me share the amazing Old Fashioned I assembled once I regrettably poured the first one with the lime juice down the drain.

  • 1.5 oz Solbru Restore
  • 1.5 oz alcohol-free Rye or Bourbon of choice (I used Lyre’s American Malt, but have heard great things about Spiritless Kentucky 74 which is en route)
  • 0.5 oz SIMPLE SYRUP, people
  • Garnishes of choice (I like 3 cherries and an orange wedge)
  • Bitters or non-alcoholic bitters, and here’s where this drink gets EVEN MORE MAGICAL, I used a Chaga tincture made in the Upper Peninsula of Michigan and it added so much amazingness

Stir it all up with ice, muddle if you wish, and do your thing. Here are some of the benefits of this delicious and good for you drink:

Reishi mushrooms grow in hot climates in Asia and boost the immune system, fight cancer, combat fatigue and depression. Chaga mushrooms grow on the bark of birch trees in northern hemisphere climates and have been studied to fight & prevent cancer, reduce inflammation, protect your liver, and support intestinal health. Chaga tincture has a strong, chicory-like woodsy taste and is a great substitute for bitters.
